This coffee is grown in Apaneca, and milled in Acatenango at Carmen + Rafael's Silva's state of the art beneficio. Because their mill sits at a high altitude, the drying of the coffee is slowed creating a smooth and well balanced cup. The Silva's are meticulous in their processing picking up where the grower leaves off, taking it from cherry to parchment, beautifully preparing the coffee for export. We fell in love with this coffee last year when we cupped it while visiting with the Silva's on our annual trip to El Salvador during harvest. After tasting over 50 samples (blind), this one jumped off the table and we knew we had to have it. This is a beautiful example of the incredible, high quality coffees coming out of El Salvador. Enjoy!

Tasting Notes: Full bodied with bright acidity, notes of green apple and round sweetness.
